Usually, when I think of Funfetti, I think of the Pillsbury boxed cake mix. While I’m not a fan of using boxed mix (I’m all for home-made!) I can’t help but love the idea of Funfetti. Sprinkles in the cake rather than just on top? Count me in!

Instead of making Funfetti cake this weekend, I decided to bring Funfetti to another one of my favorite sweet-treats: donuts! These Funfetti Cake Donuts have an extra-sweet glaze on top too. I hope you brought your sweet tooth!

Here’s the ingredient lineup:

First whisk together the flour, baking soda, baking powder, nutmeg, and granulated sugar in a medium bowl. The nutmeg gives the donuts a little something extra- you’ll see!

Now, whisk together the milk, Greek yogurt and egg, until smooth.

Add in your vanilla.

Next comes the melted butter (you can melt the butter on the stove top or in the microwave, in a microwave-safe bowl!)

It’s time to combine the dry ingredients with the wet ingredients. Pour in slowly while whisking in order to blend together.

Stir the mixtures together until just combined. Be careful not to over-mix– this causes air bubbles!

And now….add color! I used regular rainbow sprinkles to get the Funfetti effect. Any kind of sprinkles will do, as long as the colors don’t bleed into your batter

If you don’t have a donut pan…I highly suggest you buy one. I found mine at Homegoods, and it has seriously changed my life. Put your batter (which will be very thick) into each donut ring. Fill each ring about 3/4 of the way up to allow room for rising.

Into the oven they go! 350 F should do the trick. See you soon, donuts!

After about 9-10 minutes, check on your donuts. If you can stick a toothpick in them and have it come out clean, you’re good to go!

What’s a donut without a yummy glaze? Get out a small sauce pan and combine the powdered sugar, milk, and vanilla over low heat. Whisk until smooth.

Dip your donuts in the glaze so the top is covered. Don’t be afraid to get sticky! If you have leftover glaze, double dip your donuts (hey, what’s wrong with a little extra glaze?) Add more sprinkles on top if you’re like me and can’t get enough of them!

Donuts

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup Greek yogurt
  • 1 large egg
  • 2 Tablespoons unsalted butter, melted
  • 1 and 1/2 teaspoons vanilla extract
  • 1/2 cup rainbow sprinkles

Glaze

  • 1/4 cup  milk
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • extra sprinkles to sprinkle on top!

 

Preheat the over to 350 F. Whisk the flour, baking soda, baking powder and granulated sugar together in a medium bowl. In another bowl, stir yogurt, milk and egg until smooth. Add the vanilla extract and melted butter. Pour the dry ingredients into the bowl with the wet mixture and stir together. Stir in the sprinkles.

Fill the greased donut pan rings with the batter (about 3/4 way up) and bake for 9-11 minutes, or until a toothpick comes out clean.

To make the glaze, whisk together powdered sugar, milk and vanilla extract in a sauce pan at medium heat on the stove. Remove from heat and dip each donut in the glaze. Pour additional sprinkles on top and let cool. Enjoy!
