Last summer, after my first full year of adulting around in teacher-clothes, I decided that for the first time since I was 16, I wasn’t going to work for the months of July and August. The idea of it took a little while for me to get used to. Not setting an alarm clock for the Monday after school let out, irked me. I constantly felt like I had to be doing something for school. I read a couple chapters of a book on classroom management out by the pool so I could make myself feel like I was being useful.
Yeah. I got over that feeling of I-need-to-be-doing-something-productive real quick.
Summer vacation is the absolute, most delightful concept known to mankind. As a little kid, running off of the school bus on the last day of school, changing into shorts, and taking turns using the Skip-it with my older sister until the sun goes down was the definition of joy. As an adult, ripping off my teacher’s badge and veering out of the school parking lot after the last session of professional development, might just match that childhood happiness. Summer time, summer time, summer time.
Sunshine, lake, and s’mores. These three things occupy my mind all throughout the school year. And the other day, I was day-dreaming so hard about them, that I had to have at least one of these summer time essentials.
Enter: S’mores Bars. Grahams, Hershey’s and Marshmallows come together in a cookie bar base. That’s it. It’s really so simple. Summertime in a blondie, minus the campfire.

Recipe
Ingredients
- 1 stick of butter (melted)
- 1 egg
- 1 cup of brown sugar, packed
- 1 tablespoon of vanilla
- 3/4 cups of flour
- 2 cups of chopped graham crackers
- 1 cup of semi-sweet chocolate chips
- 1 cup of mini marshmallows.
- 3 Hershey Bars, chopped
Directions
Preheat the over 350 degrees and line an 8×8 pan with tinfoil. Mix the butter, egg, brown sugar, vanilla, and flour using an electric mixture until smooth, scraping down the sides as necessary. Fold in the chopped graham crackers, chocolate chips, and mini marshmallows. Pour the batter into the pan and smooth out using a rubber spatula.
Bake for 20-22 minutes, or until a toothpick comes out clean. Spread the Hershey Bars and a few extra mini marshmallows on top. Wait at least 30 minutes to cool.
Sit back, pretend like you are on summer vacation, and enjoy.
