Valentine’s M&M’s Chocolate Peanut Butter Life Cereal Bars

When I was 18, just a freshman at Uconn, a special dining hall dessert entered my life: the Chocolate Peanut Butter Life Bar. I spent my morning classes scouring the online d-hall menus, all eight of them, to see if these bars would be there for lunch dessert (they were never there for dinner dessert). Chocolate Peanut Butter Life Bars were a real rarity, and you better believe they were worth a trip across campus from Buckley to North if that’s what it took to get my hands on them.

I’ve never forgotten them, in the 10 years since my dining hall days. They were made with peanut butter, Life cereal, and chocolate. Simple and so, so perfect. We used to bring hordes of them back to the dorm room to refrigerate in our mini-fridges for later. They’re best served chilled, and they’re best served all the time.

So here’s a fancy take on Uconn’s greatest lunchtime dessert delicacy: Valentine’s M&m Chocolate Peanut Butter Life Cereal Bars. The Chocolate Peanut Butter Life Bars I’ve been fantasizing about since my days as a young Huskie, with a little February thrown in.

Valentine's M&M's Chocolate Peanut Butter Life Cereal Bars

Servings 15 bars

Ingredients

  • 7 cups Life cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 2 1/2 cups creamy peanut butter separated
  • 1 cup dark chocolate chips
  • 1 1/2 cups Valentine's M&m's
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line a 13" x 9" pan with parchment paper or spray with cooking spray and set aside. Pour the Life cereal into a large bowl and set aside.
  2. In a small saucepan on medium heat, combine the granulated sugar and the corn syrup. Stir the mixture until the sugar has dissolved and the mixture starts to bubble. When it starts to boil, remove from the stove and add in 1 1/2 cups of peanut butter. Reserve the remaining 1 cup of peanut butter. Mix the peanut butter into the corn syrup mixture until the peanut butter is melted and it is well-combined.
  3. Pour the peanut butter mixture over the Life cereal and mix until the cereal is well-coated. Press the peanut butter-cereal mixture into the prepared pan.
  4. In a microwave-safe bowl, melt together the chocolate chips and peanut butter for about one minute, mixing until well combined. Spread this on top of the Life mixture into the pan. Top with Valentine's M&m's and chocolate chips. Let the bars cool. Note: I prefer cooling and keeping these bars in the fridge, but you can definitely keep them at room temperature as well. If cooling at room temperature, cool for about 3 hours. Cooling in the fridge will take about 30 minutes. Cut and enjoy!
