I decided to mail my cousin some Fruity Pebbles Sugar Cookie Bars with Vanilla Icing for her 29 1/2 birthday. As one does.

She’s the biggest cereal girl I know. The cereal selection in her pantry growing up was #goals (my auntie is really the one to thank for that) and I’m pretty sure she’s tried almost every limited-edition cereal that’s ever been made. Fun fact: her all-time favorite is sadly no longer available, but if you’ve ever had Rice Krispies Treats cereal, in the purple box, then I assume you must be a cereal connoisseur of the same sort.

So you see why she was the perfect recipient for some cereal treatsies. These Fruity Pebbles Sugar Cookie Bars start with a soft and chewy sugar cookie base, with little Fruity Pebble crisps freckled throughout. They’re topped with a vanilla Icing reminiscent of cereal milk and then topped with more pebbles. It’s a Fruity Pebbles Palooza, if you will, and if you’re a cereal fan of the serious kind, I hope you give them a whirl.

Fruity Pebbles Sugar Cookie Bars with Vanilla Icing

Servings 16 bars

Ingredients

For the Bars:

  • 3/4 cup butter softened
  • 3/4 cup granulated sugar
  • 2 tsp vanilla
  • 1 egg
  • 3 tbsp heavy cream
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cup all-purpose flour
  • 1 cup Fruity Pebbles

For the Icing:

  • 1 cup powdered sugar
  • 2 tbsp butter melted
  • 1-2 tbsp milk

For the Top:

  • 1 cup Fruity Pebbles

Instructions

  1. Preheat the oven to 350° F and line an 8"x8" pan with parchment paper or spray with cooking spray. Set aside.
  2. To make the dough, use an electric mixer to cream together the softened butter and granulated sugar. Add in the vanilla, heavy cream, egg, baking powder, and salt, and continue to mix. Slowly add in the flour and mix until combined. Finally, fold in 1 cup of Fruity Pebbles cereal. Bake for 22-25 minutes, or until edges are golden brown.

  3. As the bars are baking, make the icing. Combine the powdered sugar, melted butter, and 1 tbsp of milk, by whisking together with a fork. Gradually add in more milk as needed to achieve a smooth consistency.
  4. Once the bars are done in the oven, drizzle the icing over the top of the bars. Then, top with another cup of Fruity Pebbles. Allow the bars to cool for about 30 minutes before cutting and serving. Enjoy!
