Nutella-Stuffed M&m Cookie Bars

Essentially a sort of Pavlov’s Dog situation, I’ve been conditioned all my life to have dessert after dinner. Since the dawn of my memories, dessert is what comes at the end of the night, every night.  I also come from one of those families that has extra dessert stomachs (you know the ones), so it’s in my genes, too. Nature and nurture are both at play. We have something sweet to conclude the evening. I don’t crave it after lunch, and I don’t crave it after breakfast. A sweet little nightcap before I go to bed. It’s just the way I am.

That’s why it was a little unusual that there were two nights in a row this week where I had nothing for dessert. And not just as in, I didn’t eat anything for dessert. I had nothing for dessert in the entire house. For two nights, I asked myself, Where were the baked goods? And then I answered myself, there are no baked goods because you didn’t bake any goods. And after that, for two nights in a row, I brushed my teeth and shuffled to bed in a tragic, dessert-less state.

On the third night of this troubling phenomenon, I knew things had to change. I feared I was well on the way to becoming one of those lunatics who is, and I quote, “not a dessert a person”. I know a whole bunch of people like that and thinking too hard about the inner workings of their minds gives me a headache.

So that’s where these Nutella-Stuffed M&m Cookie Bars came in. I needed to come back from my dessert dry-spell with a bang. I whipped up a batch of my favorite chocolate chip M&m cookie dough, spread half of it in a pan, spread a whole bunch of Nutella on top of it, and covered the top in more chocolate chip M&m cookie dough. As soon as I put one in my mouth I knew my old learned behaviors were kicking back in. Desserts must end the night. Especially if dessert is a Nutella-Stuffed M&m Cookie Bar. You can’t fight inherited dessert cravings and acquired nightly behavioral patterns when it’s the only thing you’ve known all your life.

Nutella-Stuffed M&m Cookie Bars

Ingredients

  • 1 cup 2 sticks butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups semi-sweet chocolate plus another 1/2 cup for putting on top
  • 1 cup plain m&ms plus another 1/2 cup for putting on top
  • 1 cup Nutella

Instructions

  1. Preheat the oven to 350° F and grease an 8" x 8" pan with cooking spray. Set aside.
  2. With an electric mixer, beat together the butter and the sugars in a large bowl until creamy. Mix in the vanilla, and then add the eggs, one at a time, mixing slowly after each addition.
  3. In a separate bowl, combine the flour, baking soda, and salt. Add this mixture into the butter/sugar mixture slowly, stirring well. Then, fold in the chocolate chips and m&m's, reserving some of each to place on top of the cookie bars once they come out of the oven.
  4. Press about half of the cookie dough into the bottom of the prepared pan. Then, spread the Nutella evenly over the cookie dough. Top with the remaining cookie dough, pressing it to smooth it out over the Nutella.
  5. Bake for 25-30 minutes, until the cookie bars are lightly browned. Top with the remaining chocolate chips and M&m's. Wait about 30 minutes for the bars to cool before cutting and serving. Enjoy!
