The other day I had a vision. It was a vision of pumpkin bread stuffed with graham crackers and Hershey’s chocolate and marshmallows. A vision of perfectly toasting said marshmallows with my beloved mini blow torch. The crunch of a graham and the taste of a campfire with every bite of moist, delicious pumpkin bread.

I had to make this vision come alive. And with today being Election Day, we likely all could use something delicious and comforting right about now. So, once you’re done at the polls today, whip out the Hershey’s, grahams, marshmallows, and pumpkin, and make this S’mores Pumpkin Bread. That way, while you spend the evening panicking about the wildly disturbing possibility of another four more years with a racist, misogynistic, homophobic, facist, science-denying bigot leading our country, at least you’ll have some S’mores Pumpkin Bread by your side.

S'mores Pumpkin Bread

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 3/4 teaspoon salt
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 and 1/2 cups pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup orange juice
  • 1 cup Hershey's chocolate broken up (plus more for on top)
  • 1 cup graham cracker pieces plus more for on top
  • 1 cup marshmallow pieces plus more for on top
  • Marshmallow fluff optional

Instructions

  1. Preheat the oven to 350°F and spray a 9×5 inch loaf pan with non-stick spray. Set aside.
  2. In a large bowl, whisk the flour, baking soda, cinnamon, pumpkin pie spice, and salt together until combined.
  3. In a medium bowl, whisk the eggs, granulated sugar, and brown sugar together until combined. Whisk in the pumpkin, oil, and orange juice. Pour these wet ingredients into the dry ingredients and gently mix together using a rubber spatula or a wooden spoon. Fold in the Hershey's chocolate, graham cracker pieces, and marshmallow bits. Save some of these mix-ins to put on top of the bread once it comes out of the oven.
  4. Pour the batter into the prepared loaf pan. Bake for 60-65 minutes. If the bread appears to be getting too browned on top, feel free to cover it gently with aluminum foil during baking. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. Once you take the bread out of the oven, top with remaining Hershey's chunks, graham crackers, and marshmallows. For the added campfire effect, use a mini blowtorch to go over the marshmallows.
  5. Allow the bread to cool completely in the pan on a wire rack before removing and slicing. For an extra marshmallow treat, spread fluff over your banana bread slice before eating. Enjoy!
