S’mores Brownies

I spotted an open bag of shmallows in my baking drawer the other day. They were sticky and smushed together and slightly deformed-looking. I honestly almost tossed them without a care. But then the little voice in the back of my head that comes from 18 years of growing up with a dad who dares not waste a morsel of food if it’s several days expired, let alone “sticky and smushed together and slightly deformed-looking,” stopped me in my tracks. “Don’t you dare throw those out, Jennifer,” I heard the voice whisper. “Those marshmallows are perfectly fine.”

So really, put in my position, what’s a girl to do?

A girl is to throw that already-opened, sticky, and smushed together, slightly deformed-looking bag of marshmallows into a batch of S’mores Brownies.

These brownies start with my favorite go-to dark chocolate brownie base (just swap for regular cocoa if you’re not a dark chocolate fan). Instead of the chocolate chips, however, chunks of Hershey’s chocolate, along with graham cracker pieces and bits of marshmallows are folded in (this was a challenge due to the previously-mentioned sticky state of said marshmallows). There’s more of everything on top, and the marshmallows are blow-torched for the final campfire marshmallow effect. S’mores Brownies: nothing new, nothing crazy, but everything delicious.

S'mores Brownies

Ingredients

  • ½ cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 5-6 Hershey's Bars broken into pieces (plus more for sprinkling on top)
  • 4-5 graham crackers broken into pieces (plus more for sprinkling on top)
  • 2 cups marshmallows plus more for putting on top

Instructions

  1. Preheat the oven to 350° F and prepare an 8" x 8" pan by spraying with cooking spray and set aside.
  2. Melt the butter in a saucepan or the microwave in a microwave-safe bowl. Mix in the sugar, eggs, and vanilla. Then, mix in the cocoa powder, all-purpose flour, salt, and baking powder. Fold in the Hershey's bars, graham cracker pieces, and marshmallows (break these up into chunks/bits). Save more of each mix-in to put on top after the brownies come out of the oven.
  3. Bake for 25-30 minutes, until a toothpick comes out clean. Top the warm brownies with additional Hershey's pieces, graham crackers, and marshmallows. Use a small blow torch to slightly brown the marshmallows, if desired. Let cool for about 30 minutes before cutting and serving. Enjoy!
