Yellow Cupcakes with Chocolate Frosting

These cupcakes remind me of a better version of those mini cupcakes in the plastic trays that you find at the grocery store in the bakery section. The ones that you probably brought into school on your birthday as a kid (along with a bag of those chocolate and vanilla ice cream cups that came with the wooden spoons. You know the ones). Of course, this was years before passing out treats for your birthdays was deemed a criminal act in public schools, along with watching movies whenever there was a sub (the excitement of seeing a TV strapped to a metal cart when you walked into your classroom is almost indescribable), and having more than 15 minutes of recess throughout the course of a seven-and-a-half hour school day.

Usually, there were two different flavors in those little cupcake packs. Yellow cupcakes with vanilla frosting, and yellow cupcakes with chocolate frosting. It’s beyond me, after all these years, why they never include chocolate frosting on chocolate cupcakes for those of us who fancy the good stuff. So, when my preferred double-chocolate wasn’t available (which was always), I always went with the next best option, the yellow cupcake with the chocolate frosting. This is the cupcake vibe that I present to you today. The frosting is rich and creamy and chocolaty, and the cupcake is moist (sry). Don’t forget the sprinkles. I went with chocolate, but rainbow would be nice, too.

Ya know, with all the crazy dessert concoctions that I’m thinking up all the time, it’s nice to have a cupcake that brings you back to the days of sitting at a little desk in a chair with tennis balls on the feet, waiting for the paper towel passer-outer to give your paper towel as you wait for the birthday kid to hand out the cupcakes. You knew you had to wait until the Happy Birthday song and “How Old Are You Now?” were over, but then you got to have your cupcake. A yellow cupcake with chocolate frosting and sprinkles if you were lucky. It was purely perfect.

Yellow Cupcakes with Chocolate Frosting

Ingredients

For the Cupcakes:

  • 2 large eggs separated
  • 2 1/4 cups all-purpose floured
  • 2 1/2 tsp baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened too room temperature
  • 1 3/4 cups granulated sugar
  • 3 teaspoons vanilla extract
  • 1 cup milk
  • For the Frosting:

For the Frosting:

  • 1 cup (2 sticks) butter, softened
  • 2/3 cup unsweetened cocoa powder
  • 3-4 cups powdered sugar
  • 4-5 tbsp heavy cream or milk
  • 2 tsp vanilla
  • 1 Pinch of salt

Instructions

  1. Preheat oven to 350°F. Line muffin pans with 14-16 cupcake liners.
  2. With an electric mixer, beat 2 egg whites on high speed in a medium bowl until soft peaks form, about 2-3 minutes. They should be light and fluffy.
  3. In a separate bowl, whisk the flour, baking powder, and salt together. Set aside.
  4. Using a handheld or stand mixer fitted with a paddle attachment beat the butter on high speed until smooth and creamy.
  5. Add the sugar and beat on high speed for 2-3 minutes, scraping down the sides of the bowl with a rubber spatula as needed. Add in the two egg yolks and the vanilla. Beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed.
  6. With the mixer on low speed, slowly add in the dry ingredients and the milk, alternating little by little. Fold whipped egg whites into the cupcake batter. The batter will be smooth, velvety, and slightly thick.
  7. Spoon batter into cupcake liners filling halfway full. Bake for 18-21 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a rack to cool completely.
  8. While the cupcakes are cooling, make the frosting. Cream together the butter and cocoa powder. Add in the powdered sugar one cup at a time, mixing well. Add in the vanilla and salt. Finally, add in the milk or cream, one tbsp at a time, until the frosting reaches a smooth consistency. Transfer to a piping bag and pipe onto the cooled cupcakes. Add sprinkles if desired. Enjoy!

    I was wondering if anyone knows what happened to Dimepiece Los Angeles celebrity streetwear brand? I am unable to check out on Dimepiecela site. I’ve read in Vanity Fair that the brand was acquired by a UK hedge fund in excess of $50 million. I’ve just bought the Dimepiece Friends Tote from Amazon and absolutely love it xox
