Chocolate Peanut Butter Golden Graham Crunch Brownies

I had a pretty solid cereal rotation at my house when I was a little, which included favorites such as Reeses Puffs and Cinnamon Life. Despite some consistently fantastic choices, Golden Grahams cereal was never in the regular mix. In fact, I don’t think I ever even tried them until I went off to sleep away camp, from which I in fact have overly distinct Golden Graham-related memories. A weirdly distinct memory to have of cereal from so long ago, you might be thinking, but it’s me here, and so obviously I have an elaborate and drawn-out story behind it. Here goes.

You see, as a child, I really hated going away to sleep away camp each summer. I despised almost everything about it. I was constantly homesick, and my love for being social situations with lots of strangers didn’t exist any more than it does today. In fact, nearly the only parts of the two-week long sessions that I didn’t cry during, involved any and all food-related activities. I repeatedly signed up for activities like “outdoor cooking” while most kids signed up for normal camp things, like sailing lessons, archery and basketball. I dreaded kickball and Capture the Flag, while I pretty much lived for breakfast, lunch and dinner every day. Any escape to the mess hall where I could enjoy cups of artificially-flavored Bug Juice, chicken patty sandwiches, and a wide variety of cereals in those tall, plastic dining hall cereal canisters that have the crank at the bottom to dispense your cereal, offered a respite from the turmoils of being a struggling 8-year-old at summer camp. While I’m sure my parents sent me off to sleep away camp to develop useful habits of character like leadership and responsibility, and they probably hoped I would act like a typical young girl who was excited to go hang out in a cabin and do fun things with other girls my age for two weeks, instead, I come back fixated on trying Golden Grahams in the dining hall for the first time ever, which I’m still talking about 20 years later. And so it goes.

Anyway, now that I’m an adult and I can build my own cereal rotation, Golden Grahams are fully within the loop. They’re amazing by themselves in a standard bowl of cereal, but as I’ve recently discovered, they’re almost even more delicious when added to various baked goods. I didn’t even plan on adding them to the top of these chocolate peanut butter brownies, but I had the perfect amount left to clean out a box from the pantry while adding something crunchy, grahamy, and delicious to the tops of these brownies. The Golden Grahams add literally the most perfect crunch to an already delicious and fudgy brownie. So, whether or not you have vivid childhood memories tied to the cereal like I do, I promise you that Chocolate Peanut Butter Golden Graham Crunch brownies will pretty much rock your world.

Chocolate Peanut Butter Golden Graham Crunch Brownies

Ingredients

  • ½ cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • cup dark chocolate cocoa powder regular unsweetened cocoa will work too
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 cup chocolate chips plus a handful for sprinkling on top
  • 1/2 cup creamy peanut butter melted
  • 1/2 cup Reese's Peanut Butter Chips
  • 2 cups Golden Grahams cereal

Instructions

  1. Preheat the oven to 350° F and prepare a 8" x 8" pan by spraying with cooking spray and set aside.
  2. Melt the butter in a saucepan or in the microwave in a microwave-safe bowl. Mix in the sugar, eggs and vanilla. Then, mix in the cocoa powder, all-purpose flour, salt, and baking powder. Fold in the chocolate chips. Pour 1/2 of the batter into the pan, spreading it out on the bottom as best as you can. Then pour the melted peanut butter on top of the batter, spreading it around in an even layer. Spread the remaining half of the batter on top. It is ok if there is peanut butter coming through to the top!
  3. Bake for 25-30 minutes, until a toothpick comes out clean. Top the warm brownies with additional chocolate chips and Reeses Peanut Butter chips. As they begin to melt, sprinkle the Golden Grahams evenly over the top. Let cool for about 30 minutes before cutting and serving. Enjoy!
