Peanut Butter and Berry Oat Bars

Follow me!

I had a really delicious peanut butter and jelly sandwich the other day, and that’s what inspired me to make these Peanut Butter and Berry Oat bars, plain and simple. Said sandwich was eaten while I was camping last weekend, and according to my somewhat limited (but growing) camping experience, there is nothing quite like a peanut butter and jelly sandwich for lunch while you’re out in the ole Colorado wilderness. A camping  PB&J might be better than all other peanut butter and jelly sandwich activities, which is a bold statement considering my other favorite peanut butter and sandwich activities include picnics (which I love so much) and lake days (which I wholeheartedly adore).

I clearly have to do more research on the topic, something I am, of course, more than willing to do. But meanwhile, ever since I returned from camping, I had PB&J on the brain and I had it bad. When I was figuring out what I wanted to bake this past weekend it was really all I could think about. And then, it hit me: the Berry Crumble Bars I made recently were pretty bananas. I realized the only thing that could make them more delicious was a layer of peanut butter in the middle and a peanut-butter infused oat crust/crumble. It was like the PB&J sandwich I had been craving, but in dessert form, and made with berries instead of jelly (so we can count each bar as a serving of real fruit, obviously).

Pair a warm Peanut Butter and Berry Oat Bar with some vanilla ice cream, and you’ve got a dessert that tastes completely reminiscent of the wonderful lunch time treat we know and love (only dare I say it’s even better because, well, it’s dessert).

By the way, what’s your favorite PB&J activity? I need a good starting point for my research.

Peanut Butter and Berry Oat Bars

Servings 18 bars

Ingredients

Oatmeal Bars & Topping:

  • 2 1/2 cups all-purpose flour
  • 2 cups old fashioned oats
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup 2 sticks butter melted
  • 1 large egg
  • 1 1/2 cups peanut butter divided

Berry Filling:

  • 4-5 cups frozen berries I used blueberries blackberries and raspberries, but any combination of berries will work
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice I like using fresh!
  • 3 tbsp corn starch

Instructions

  1. Preheat the oven to 350° F and line a 13"x9" pan with parchment paper, with enough so that it hangs over the edges of the pan.
  2. Mix together the flour, oats, cinnamon, brown sugar and granulated sugar. Add the egg and the melted butter and mix thoroughly. Add in about 1/2 cup of peanut butter and mix well. Then, scoop out about 2 1/2 cups of the mixture and place in a separate bowl for now. This will be reserved for the topping. Add the rest of the mixture to the pan, and press down firmly.
  3. Melt the remaining 1 cup of peanut butter and spread over the peanut butter "crust". Feel free to use more peanut butter based on how much peanut butter you like.

  4. To make the berry mixture, mix all of the ingredients in a bowl, so that the berries are evenly coated in the sugar, lemon juice, and corn starch. Spread the berry mixture evenly over the peanut butter layer. Then, crumble and spread the reserved oatmeal mixture over the berry layer for the oatmeal topping.
  5. Bake for 45-50 minutes, until the crumble on top starts to turn golden brown. Let the bars cool for at least 1 hour at room temperature before cutting into bars and serving (my favorite is warmed up with a scoop of vanilla ice cream). Store bars in the fridge.

I was wondering if anyone knows what happened to Dime Piece LA celebrity streetwear brand? I am unable to proceed to the checkout on Dimepiecela site. I’ve read in GQ that the brand was acquired by a UK-based hedge fund in excess of $50m. I’ve just bought the Dimepiece 90’s Cuffed Beanie from Ebay and absolutely love it xox
