No-Bake Chocolate Peanut Butter Oat Bars

It’s been 98 degrees or hotter every day this week.

I used to really love the heat. In my younger years, I spent many a summer baking outside in a lounge on my patio in the Connecticut humidity, reading Harry Potter from sun up to sun down, without needing to cool off. These days, on the contrary, I walk outside first thing in the morning, catch a fleeting glimpse of the heat of the sun, recognizing  what kind of day it’s going to be, only to march back inside straight toward the window AC unit that works tirelessly to pump cool air into my tiny house. The window unit isn’t much, but at this riveting age in my life where I can’t seem to tolerate the ole’ heat like I used to, it usually does the job pretty well.

That is, until I have to turn the oven on, which is something, it’s fair to say, that I do quite often. I bake something in there nearly every day, as I’m sure you can imagine. It heats up the kitchen (and honestly the rest of the house, too) to such sweltering levels, that I’ve been needing to take frequent oven breaks outside to cool off anytime I’m making something. Now don’t get me wrong, I love my kitchen in my cute little house, and I don’t want to say a bad word about it. But an oven set to 350 and a week-long heat wave was just too much for me when I was considering my next dessert. I needed a no-bake recipe, and I needed one stat.

These bars are another peanut-butter and chocolate combo to add to the repertoire; this time, in oat-bar form. I love desserts with oats as the base, because I truly think that makes them perfectly acceptable to eat for breakfast. I know that there’s layers and layers of chocolate in here too, but there’s also an equal or greater amount of peanut butter, which arguably is just another aspect that makes these a breakfast food if your heart so desires and early-morning oat bar. These bars are a chocolaty, peanut buttery,  no-bake oaty delight, that perfectly fit the bill when you’re trying to not spontaneously combust in the middle of an oven-heated kitchen during a heatwave.

No-Bake Chocolate Peanut Butter Oat Bars

Servings 16 bars

Ingredients

  • 1 cup 2 sticks butter
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 3 1/2 cups quick cooking oats
  • 2 cups chocolate chips divided
  • 3/4 cup peanut butter
  • 1 cup peanut butter chips

Instructions

  1. Grease a 9"x9" pan with cooking spray and set aside.
  2. Over medium heat, melt the two sticks of butter in large saucepan. Once melted, stir in the brown sugar and vanilla. Mix in the oats. Cook over low heat for about 5 minutes, until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
  3. Meanwhile, melt 1 cup of the chocolate chips (reserve the other cup for topping) and peanut butter in a small saucepan over low heat, stirring frequently until smooth and melted. Pour the chocolate-peanut butter mixture over the first oat layer in the pan, and spread evenly with a knife or the back of a spoon. Top with the remaining oat mixture, and then top with remaining chocolate chips and peanut butter chips.
  4. Cool the bars in the fridge for 2-3 hours before serving. Store the bars in the fridge for best results!
