I don’t have a story to go along with today’s post, and I’m not going to try to tell you all of the wonderful reasons that you should make these Cinnamon Toast Crunch Sugar Cookie Bars (for the record, there are many).

Instead, before today’s recipe, you’ll find a few ways to help take action in the Black Lives Matter fight for justice that’s happening right now. Please, please, please do something. And once you’ve done something, don’t stop. Keep going. Keep talking about it. Keep fighting for justice. Educate yourself. Learn. Listen. Talk. Read. Grow.

Cinnamon Toast Crunch Sugar Cookie Bars

Ingredients

Ingredients:

For the Cinnamon Sugar Filling:

  • 1/4 cup butter melted
  • 1/3 cup brown sugar
  • 1 1/2 tsp cinnamon

For the Cookie Dough:

  • 3/4 cup butter softened
  • 3/4 cup granulated sugar
  • 2 tsp vanilla
  • 3 tbsp heavy cream
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cup all-purpose flour
  • 1 egg

For the Icing:

  • 1 cup powdered sugar
  • 2 tbsp butter melted
  • 1-2 tbsp milk

For the Top:

  • 2 cups Cinnamon Toast Crunch Cereal

Instructions

Instructions:

  1. Preheat the oven to 350° F and line an 8"x8" pan with parchment paper or spray with cooking spray. Set aside.
  2. For the filling, mix together the melted butter, brown sugar and cinnamon in a small bowl. Set aside.
  3. To make the dough, use an electric mixer to cream together the softened butter and granulated sugar. Add in the vanilla, egg, heavy cream, baking powder and salt, and continue to mix. Slowly add in the flour and mix until combined. Then, fold the cinnamon sugar filling mixture into the dough. Do not over mix, the cinnamon sugar mixture should be swirled in!

  4. Spread the cookie dough into the prepared pan, and bake for 25-30 minutes until edges look slightly golden brown.
  5. As the bars are baking, make the icing. Combine the powdered sugar, melted butter, and 1 tbsp of milk, by whisking together with a fork. Gradually add in more milk as needed to achieve a smooth consistency.
  6. Once the bars are done in the oven, drizzle the icing over the top of the bars. Then, top with the Cinnamon Toast Crunch cereal. Allow the bars to cool for about 30 minutes before cutting and serving. Enjoy!
