Chocolate Chip Fluffernutter Bars

I didn’t know what a Fluffernutter was up until recently (aka two days ago). Let me explain.

I was deciding what to make for dessert the other day when I stumbled upon a recipe from Picky Palate called Fluffernutter Churro Blondies that looked seriously insane. They were drizzled with peanut butter and fluff and topped with mini chocolate chips, and I had to have them immediately. I looked at the recipe and decided to make something similar, only with my favorite peanut butter cookie bar base. They came together quickly. I looked at the bars, fresh out of the oven, after covering them in a large quantity of Marshmallow Fluff and mini chocolate chips, with a delicious peanut butter drizzle. I decided to call them: Chocolate Chip Fluffernutter Bars.

And then, I realized I had no idea what the word Fluffernutter meant, and it was something I had always heard thrown around but never knew what it actually really was. The more I said the word Fluffernutter in my head, the weirder it started to sound (does that ever happen to you?) and I couldn’t just name a recipe with a term I wasn’t completely familiar with. I mean, I knew it must be something with peanut butter and fluff, as I looked over my marshmallowy bars and compared them to the similar ones I had seen in the original peanut-butter-and-fluff-filled-recipe from Picky Palate. I did a quick Google.

fluffernutter (also called a “peanut butter and marshmallow sandwich”, “peanut butter and marshmallow fluff sandwich”, or “peanut butter and marshmallow stuff sandwich”) is a sandwich made with peanut butter and marshmallow creme usually served on white bread.

Say what now? A “Fluffernutter” is just a peanut butter and fluff? The very same sandwich I lunched on as a child, which I referred to, in the most straightforward way, as a,  “peanut butter and fluff?” I mean, it’s fantastically obvious that a Fluffernutter is just that. I don’t know how I missed something so simple for so long. I have to say, it’s a little embarrassing. I vowed to never share my little sandwich-related knowledge gap to another soul.

So here I am, obviously telling anyone and everyone who is reading this on the entire internet about the whole thing. I think it’s because I need to know: were you a “peanut butter and fluff” eater as a child, or did you have “Fluffernutters” in your lunch box?

Anyway, if you take away one thing from this stupid story that I just spent five paragraphs on, it’s that you need to make these Chocolate Chip Fluffernutter Bars, and you need to make them now. Whatever you call the delightful combination peanut butter and Fluff, these bars will delight your senses take you back to simpler times when the hardest decision you had to make was what kind of Doritos to have with your peanut butter and fluff sandwich.

Chocolate Chip Fluffernutter Bars

Ingredients

Ingredients:

  • 1/2 cup 1 stick butter, softened
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup peanut butter chips
  • 1/2 cup white chocolate chips
  • 1/2 cup mini semi sweet chocolate chips plus more for sprinkling on top
  • 2 cups Marshmallow Fluff
  • 1/3 cup peanut butter melted for drizzling

Instructions

Instructions:

  1. Preheat the oven to 350° F and prepare an 8" x 8" by spraying with cooking spray or lining with parchment paper.
  2. Mix together the softened butter, 1/2 cup of peanut butter, and brown sugar until smooth and creamy. Add in the egg and vanilla. Then, mix in the all-purpose flour until combined. Fold in the peanut butter chips, white chocolate chips, and 1/2 cup mini chocolate chips. Spread the batter into the prepared pan and bake for 22-25 minutes until the edges turn brown and the middle is set.
  3. As the bars cool, add on the Marshmallow Fluff topping. It will melt and get easier to spread after a couple of minutes. Melt 1/3 cup of peanut butter in a microwave safe bowl for ~45 seconds. Drizzle over the bars using a spoon or transfer the peanut butter to a ziplock bag and snip the corner. Let the bars cool for at least 30 minutes before cutting and serving. Enjoy!
