The idea for these cereal bars came about toward the end of my five-day mental preparation to enter the grocery store for the triweekly quarantine haul. I was surveying what we needed and what we didn’t. It’s a long process that takes a while these days. I always seem to plan to go on Monday; starting off the week with a fresh batch of groceries is, without fail, a great way to head into the week. But by the time Thursday rolls around, and there’s a single egg left in the tray and we’re officially out of brown sugar and most kinds of cheese, I know it’s really time to make a move toward King Soopers.

Anyway, I noted that it was time for a cereal re-up when I headed to the store this week. I absolutely love cereal, but I never had more than a box or two at once before this whole quarantine thing happened. Now, we have a minimum of five boxes at a time. I don’t know why staying at home equates to increasing your cereal intake by 10 fold, but the medleys that have been created in the last few weeks have gotten almost out of hand. No one needs this much cereal in their home at one time, and yet, if you ask me, everyone really does.

In order to buy a new box of the good stuff during the impending grocery trip that lay ahead, however, I knew it was only right to clear out some of the nearly-empty cereals taking up space in the ole’ lazy Susan. Upon further investigation, there were about 2 cups of Fruity Pebbles left, which was just the right amount for a small batch of Fruity Pebbles Marshmallow Treats. I happened to have half of a bag of marshmallows begging to be used up, too, so a small batch of these treats was really a perfect plan.

Whether you want to make these for fun or whether you’re just trying to eat up your cereal so you can go out and buy more cereal to eat up, these Fruity Pebbles Marshmallow Treats will make two giant squares that you’ll want to devour immediately.

Fruity Pebbles Marshmallow Treats (small batch)

Servings 2 giant squares

Ingredients

Ingredients:

  • 3 tbsp butter
  • 1/2 bag marshmallows approximately 8 oz
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 2 cups Fruity Pebbles

Instructions

  1. Prepare a loaf pan with parchment paper and set aside.
  2. Melt the butter in a sauce pan on medium heat. Once melted, add in the marshmallows and heat on low until melted. I always save a couple of marshmallows to mix in toward the end, so feel free to save a few (I'll explain soon!). It is important to keep the heat on low or your marshmallow might harden too quickly. Once the marshmallows have melted completely, remove from heat, and add in the vanilla and salt. Then, mix in the Fruity Pebbles. If you saved any marshmallows, break them into little pieces and stir them in at this point.
  3. Turn the mixture into the prepared loaf pan. Do not press down on the treats too much, or they will be too hard and dense. Let the treats cool for 45 minutes to an hour before cutting and serving. Enjoy!
