I was on the phone with my cousin and my sister the other evening. We were talking about nothing in particular and likely rambling on to one another about god-knows-what, as us girls always do, when I asked them to help me make a crucial decision. I needed a vote: should I make Oreo-Stuffed Cookies ‘N’ Creme Brownies, or Cookies ‘N’ Creme-Stuffed Oreo Brownies?
The difference between the two is subtle, yet nuanced. It’s a texture thing, for one. Crunch from the Oreos on top? Or should the crunch hit when you bite through to the middle? And what about the aesthetics of the brownies? We pictured both scenarios: white chocolate, cookie-studded, Hershey’s Cookies ‘N’ Creme bars oozing out of the middle of the brownies, or all melty-like, sitting more visibly on top of each brownie for all to see. These are the types of questions that keep me up at night.
In the end, it didn’t matter, really. Knowing either variation would be delicious, I decided to make Oreo-Stuffed Cookies ‘N’ Creme Brownies, thinking the whole time that I would certainly need to test out the reverse one day, and then ultimately try out the most excessive combination: Brownies with Oreos and Cookies and Cream bars both in the middle and on top. You can’t go wrong with any way you decide to do it, really, when there are chocolate chip brownies, Oreos, and Hershey’s Cookies ‘N’ Creme bars involved. They’re chocolaty, fudgy, and cookies ‘n’ cremey, and let’s not forget the layer of Oreos right in the middle. The wonderful world of Oreo-Stuffed Cookies ‘N’ Creme Brownies awaits you!
Oreo-Stuffed Cookies 'N' Creme Brownies
Ingredients

- ½ cup butter
- 1 cup white sugar
- 2 eggs
- 1 tsp vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
- 1 cup chocolate chips plus a handful for sprinkling on top
- 16 Oreos
- 3-4 Hershey's Cookies 'N' Creme Bars

Preheat the oven to 350° F and prepare a 8" x 8" pan by spraying with cooking spray and set aside.

Melt the butter in a saucepan or in the microwave in a microwave-safe bowl. Mix in the sugar, eggs and vanilla. Then, mix in the cocoa powder, all-purpose flour, salt, and baking powder. Fold in the chocolate chips. Pour 1/3 of the batter into the pan, and then place about 16 Oreos into the batter, pressing down as much as possible. Spread the remaining batter on top. Use a spoon to try to spread the batter over the Oreos as much as possible.

Bake for 25-30 minutes, until a toothpick comes out clean. Top the warm brownies with Hershey's Cookies 'N' Creme pieces and additional chocolate chips. Let cool for about 30 minutes before cutting and serving. Enjoy!
