Berry Crumble Bars

I never thought I’d be someone who kept a carton of vanilla ice cream in the house at all times. Vanilla ice cream just has never been my thing. But, seeing as how I really can’t be trusted keeping any other kind of ice cream in the house without eating the entire carton in one night (True Life: That Happens Every Single Time), then vanilla has to be the backup, emergency ice cream freezer staple. It’s the only kind of ice cream I can trust myself to have any form of self control around. It only gets taken out for emergency situations.

Thankfully for me, the only kind of emergency situations I ever regularly encounter are dessert-related ones. At around this time last year, I decided I should branch out from my chocolate-dessert-only habit, and incorporate more fruits into my baking. From peach cobbler to apple-cinnamon bundt cakes to lemon loafs, it’s been a wild ride of a time realizing that not every single thing that comes out of my kitchen has to have massive amounts of chocolate chips and creamy chocolaty ganaches oozing out of every crevice. I’ve learned that there’s a little more to life than chocolate, though it’s weird for me to say, and in my newly-formed opinion, there’s no better alternative to a chocolaty dessert than a warm, fruity dessert with a big scoop of vanilla ice cream.

That brings me to these Berry Crumble Bars, which basically resemble a classic and delicious berry crisp, just in bar form. At the base of these bars is lies an oatmeal cookie crust, a hint of cinnamon throughout every bite. Topped with berries (I used frozen; you can definitely use fresh), warm and juicy, when served warm (as they should be). More of the oatmeal cookie layer is crumbled over the top, for texture and good measure. That’s it. Plain and simple. The perfect fruity dessert. They’re berry delicious, if you will. And I certainly will.

Berry Crumble Bars

Ingredients

Ingredients:

Oatmeal Bars & Topping:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups old fashioned oats
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup 2 sticks butter melted
  • 1 large egg

Berry Filling:

  • 4-5 cups frozen berries I used blueberries, blackberries and raspberries, but any combination of berries will work
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice I like using fresh!
  • 3 tbsp corn starch

Instructions

Directions:

  1. Preheat the oven to 350° F and line a 13"x9" pan with parchment paper, with enough so that it hangs over the edges of the pan.
  2. Mix together the flour, oats, cinnamon, brown sugar and granulated sugar. Add the egg and the melted butter and mix thoroughly. Scoop out 2 cups of the mixture and place in a separate bowl for now. This will be reserved for the topping. Add the rest of the mixture to the pan, and press down firmly.
  3. To make the berry mixture, mix all of the ingredients in a bowl, so that the berries are evenly coated in the sugar, lemon juice, and corn starch. Spread the mixture evenly over the oatmeal base. Then, crumble the reserved oatmeal mixture over the berry layer for the oatmeal crumble topping.

  4. Bake for 45-50 minutes, until the crumble on top starts to turn golden brown. You do not need to let them cool if you are serving in a bowl with vanilla ice cream and eating more like a cobbler. However, to ensure that they turn into bar form, cool in the fridge for 2 hours before cutting and serving (hopefully warmed back up with that scoop of vanilla!). Store bars in the fridge.
