Potato Chip Chocolate Chip Cookies (Small batch)

Last week, the munchies struck. I wanted chips, I wanted cookies. I wanted chips in my cookies.

There’s not a lot to be said here really. As much as I ordinarily tend to blabber on about the inner-workings of my dessert-obsessed mind, today just isn’t that day. Sometimes, you just have the simplest of cravings, and you decide to just put them together, and that’s that.

The cookies are soft and gooey and chocolaty, and the potato chips are crunchy and crispy. They’re sweet. They’re salty. They’re Potato Chip Chocolate Chip Cookies, and they’re downright delicious.

Chocolate Chip Potato Chip Cookies

This small batch of cookies makes two giant cookies or four smaller cookies.

  • 6 tbsp unsalted butter, softened
  • 1/4 cup brown sugar
  • 3 tbsp granulated sugar
  • 1 large egg yolk you can reserve the egg white for another use!
  • 3/4 tsp vanilla extract
  • 1/2 + 2 tbsp cup all-purpose flour
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup crushed potato chips I used ridged kettle cooked, but any kind will work!

  1. Preheat the oven to 375° F. Grease a baking pan with cooking spray or line with a silicon mat.
  2. In a medium bowl, beat the butter and both sugars with an electric mixer on medium speed until light and fluffy, for about one minute.
  3. Next, add the egg yolk and vanilla and beat until just combined.
  4. Whisk together the flour, salt, baking soda and baking powder in a separate bowl.
  5. Combine the flour mixture with the butter mixture, and beat just until combined.
  6. Stir in the chocolate chips and crushed potato chips until combined.
  7. Scoop the dough into two giant balls (or four smaller balls), and space them spread apart on the baking sheet.
  8. Bake for 10-12 minutes (less time for smaller cookies), removing the cookies from the oven when the edges just start to turn golden brown. Sprinkle the tops of the cookies with additional chocolate chips and potato chips, if desired.
  9. Let the cookies rest on the baking sheet for a few minutes before moving them to a wire rack to cool.
