Lucky Charms Cookies (recipe for 2!)

These are some weird times we live in. Schools are shut down, there’s no toilet paper to be found on any of the shelves, and yesterday I made a cookie recipe that made only two servings.

Amidst the Coronavirus outbreak, I’ve been practicing some pretty serious social distancing for a few days now. And, it just so happens that during times of high stress and anxiety, I tend to bake things. So when your everyday, baseline levels cause you to whip up desserts on a consistent basis, just imagine the heights that Coronavirus panic-anxiety levels can soar to. So, needless to say,  the urge to bake has been *slightly* higher than normal for me lately. Unfortunately, I have zero self-control when it comes to having desserts in the household, which is difficult to avoid when you’re limiting your contact with all others by any means but all you want to do is make cookies and chocolate chip muffins. But, as I mentioned, social distancing leads you to do crazy things, so I figured out how to make cookies for two, rather than cookies for 30, (which we could easily eat, just the two of us, and therein lies the original dilemma that brought me to this very place).

So here’s a scaled-down cookie recipe, that makes two absolutely gigantic cookies (because let’s face it, it’s still me here, people). This recipe is adapted from Dessert for Two’s Small Batch Chocolate Chip Cookie recipe. But, because it’s St. Patrick’s day, and I bought a giant box of Lucky Charms the other day knowing that I would surely need it for something if we went into shelter-in-place mode, I subbed out the semi-sweet morsels in her recipe for white chocolate chips and Lucky Charms marshmallows. I put some more of each on top when they came out of the oven. The white chocolate chips get a little warm and melty, and the Lucky Charms marshmallows make you forget that the world is experiencing a global health pandemic, at least for just a few minutes. It’s the perfect cookie for today, really.

Lucky Charms Cookies

Ingredients

  • 6 tablespoons unsalted butter softened
  • 1/4 cup dark brown sugar
  • 3 tablespoons granulated sugar
  • 1 large egg yolk egg white reserved for another use
  • 3/4 teaspoon vanilla extract
  • 1/2 cup + 2 tablespoons all-purpose flour
  • 1/8 teaspoon fine salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup white chocolate chips plus more for sprinkling on top
  • 1/2 cup Lucky Charms marshmallows plus more for sprinkling on top

Instructions

  1. Preheat the oven to 375. Line a light-colored baking sheet with a silicone mat.
  2. In a medium bowl, beat the butter with an electric mixer on medium speed until fluffy, about 20 seconds.
  3. Add the sugars, and beat for about 30 seconds. The mixture will turn a pale color and be fluffy.
  4. Next, add the egg yolk and vanilla and beat until just combined.
  5. Whisk together the flour, salt, baking soda and baking powder in a separate bowl.
  6. Sprinkle the flour on top of the butter mixture, and beat just until combined.
  7. Stir in the white chocolate chips and Lucky Charms marshmallows.
  8. Scoop the dough into two giant balls, and space them evenly on the baking sheet.
  9. Bake for 10-12 minutes, removing the cookies from the oven when the edges just start to turn golden brown. Sprinkle the tops of the cookies with additional white chocolate chips and Lucky Charms.
  10. Let the cookies rest on the baking sheet for 1 minute before moving them to a wire rack to cool.
