Mini Oreo Chocolate Chip Cookies

I was feeling like cookies the other day, as I often am, but instead of whipping up a batch of my all-time favorite chocolate chip classics, I decided to change it up a little. I had seen a picture of a donut covered in Mini Oreos the other day, which made me remember just how wonderful those tiny cookies are. I won’t advocate for the mini version of most foods (I don’t even see the point of fun-sized chocolate bars or mini cupcakes), but Mini Oreos are a completely different story. I could probably eat an entire bag of them in one sitting. There’s something slightly different about the cookie-to-creme filling ratio that is just so beyond perfect I can hardly explain it.

So, I surmised that there could be absolutely nothing even slightly unpleasant about pouring an entire bag of Mini Oreos into a batch of chocolate chip cookies, topping them with more Mini Oreos, and sprinkling rainbow sprinkles on top of the melty chocolate chips. Taste tests conducted shortly after they came out of the often confirmed my suspicions. The only thing I regretted about these Mini Oreo Chocolate Chip Cookies is that I’d never made them before. Head to the nearest cookie aisle, find that beautiful shiny blue pouch of minis, and see what you’ve been missing your entire life.

Mini Oreo Chocolate Chip Cookies

Servings 25 cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks) unsalted butter softened
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups chocolate chip (more for garnish)
  • 1 bag Mini Oreos (one big bag or two of the smaller pouches)
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat oven to 375° F.

    Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and crushed Mini Oreos, saving some whole Oreos to place on top of cookies after baking. Use a cookie scoop to drop dough onto cookie sheet. I did two scoops for larger cookies.

    Bake for 9 to 11 minutes or until golden brown. Sprinkle more chocolate chips, Mini Oreos, and rainbow sprinkles on top. Cool on baking sheets for 2 minutes, and then place on wire racks to cool completely.
