Peach Crumble Bars

Last summer, I arrived at a Colorado peach festival with my husband on a Saturday afternoon. As we got out of the car and walked toward the festival, he casually proclaimed, “This will be my first time ever having a peach.”

Now, I know what you’re thinking, but I promise you, he was not joking in the slightest. This man had literally never eaten a peach in his life until this late August day of 2018. I believed him when he said it too, because when I saw him eat his first ever peach at the Lafayette Peach Festival that afternoon, I knew it was a genuine reaction to tasting the deliciously juicy and fuzzy fruit for the very first time. Even a year later, just the thought of peaches straight up makes me laugh out loud when I think about the fact that my husband was 27 years old before he ever ate a peach.*

Obviously peaches are freaking delicious, and the other day I was super hungry in the produce aisle of the store when I said to myself, “I need to have this bag of 11 peaches.” So I bought it, and we ate like 4 of them before I realized that they were beginning to get soft and would probably be going bad over the next couple of days.

“I better use these peaches in something desserty and I better use them fast,” I thought, as I eyed them on the counter.

So, here is the recipe for the Peach Crumble Bars that I made the other night with a fruit bowl full of slightly over-ripened peaches. The first layer is a cinnamon-oat-brown sugar crust. Next up, the peaches and cream layer. Another layer of the cinnamon-oat crust, with the addition of pecans (for an extra crunch), sits on top. Then, they’re baked in the oven until the top is crispy and the peaches are warm. These bars are peachy and amazing, and they are absolutely not to be eaten without several scoops of vanilla ice cream on top. My husband, who is now a big peach guy, gives his full approval.

Peach Crumble Bars

Ingredients

Crust & Topping

  • 1 cup all-purpose flour
  • 1/2 cup old fashioned rolled or quick oats
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 10 tbsp unsalted butter cold and cubed
  • 1/2 cup chopped pecans

Peach Filling

  • 1 large egg
  • 1/2 cup granulated sugar
  • 1 tbsp all-purpose flour
  • 1/4 tsp salt
  • 3 medium peaches peeled and chopped (about 1.5 cups)

Vanilla Icing

  • 1/2 cup confectioners' sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

Directions:

  1. Preheat the oven to 350°F degrees. Spray an 8x8 pan with nonstick spray. Set aside.

  2. Make the crust/topping: In a large bowl, whisk the flour, oats, brown sugar, and cinnamon together until combined. Mix in the cold butter with a fork until the crust is crumbly. Set aside 3/4 cup of the mixture for the topping, and put in a small bowl and mix with pecans.

  3. Press the remaining oat mixture into the bottom of the prepared baking pan. Bake for 15 minutes.

  4. Make the filling: While the crust is baking, whisk the egg and sugar together until smooth and creamy. Add the flour and salt. Whisk until combined. Fold in the chopped peaches. Remove crust from the oven after 15 minutes and pour the filling over hot crust. Sprinkle with reserved oat/pecan mixture.

  5. Bake for 30-32 minutes or until golden brown on top. Allow to cool in the pan on a wire rack. Transfer to the refrigerator and allow to chill for at least 2 hours before cutting.

  6. Make the vanilla icing: Using a fork or spoon, whisk/stir the confectioners' sugar, cream, and vanilla extract together until smooth. Add another Tablespoon of milk to thin out if needed. Drizzle over each square. Leftovers keep well in the refrigerator for up to 5 days.

  7. Tip: My favorite way to eat these was warmed up with vanilla ice cream!

    You realize this is a timely post as IT IS ALMOST PRIME PEACH SEASON. First peaches just came off the tree and they get better and better.
