Reese’s Peanut Butter Brownie Cups

It’s really shocking to me that I haven’t posted a recipe on here that involves two of my favorite foods in the universe. Yup, you guessed it (good for you for reading the title!): chocolate and peanut butter. Now, there isn’t a day that I go without eating chocolate and peanut butter. I mean, literally. I keep Reese’s cups on my night table so they can be the last thing I eat every night before I go to bed. Is there something wrong with that? Probably. Do I care? Probably not.

So here’s a winner of a recipe that I first made a very long time ago, and still get requests for. The latest request was from my sister, Emalie, who has “Treat Thursday” every so often at the school at which she teaches. For “Treat Thursday”, teachers bring in baked goods for other staff members to purchase to raise money for their school. If you’ve ever taught before, chocolate is one thing that might be able to get you through the school day. (Or wine. But I guess that’s not exactly legal to consume during the school day). Anyway, I made these for some hard-working teachers (and I also made extra to eat at my house…don’t tell!)

To get started, combine sugar, butter and water in a microwave-safe bowl. Microwave on high for about 45 seconds (or until butter is melted).

Stir in 1 1/2 cups of semi-sweet chocolate chips, and stir until the chocolate is melty too.

Crack in your eggs and add vanilla.

Now it’s time for the dry ingredients. In go the flour and baking soda; combine into the mixture.

Add 3/4 cups of chocolate chips and 3/4 cups of peanut butter chips to add some extra oomph to your brownie cup.

Pour batter evenly into muffin tins. Don’t forget to grease the tins very well or you’ll never get these things outta there.

Bake at 350 F for 13-15 minutes (or until a toothpick comes out clean). Use the back of a tablespoon to indent each brownie cup.

Now for the good part: Melt some peanut butter in the microwave, and drizzle about a tablespoon (or two, if you have a medium to strong obsession with peanut butter like I do) in to each cup.

Add some Reese’s Pieces candies or mini chocolate chips into the center of each, and voila! Reese’s peanut butter brownie cups for your enjoyment. I forgot to mention that while I usually prefer brownies to be warm and gooey, I like these things best chilled. Try them right out of the oven, and pop a few in the fridge for later!
