Here I go writing my second post in a row about a dessert that doesn’t have any chocolate in it. I’m so very versatile these days, dontcha think?

I made these Sugar Cookie Bars to send to my father-in-law for his birthday. He’s not a huge fan of chocolate so I ventured out into the world of chocolatelessness and tried to figure out what kind of treat I could send through the mail that wouldn’t be completely destroyed somewhere along the way from Colorado to Connecticut. I first thought about making sugar cookies, but frosted cookies would certainly not do well traveling haphazardly in the hands of the US Postal Service across the country, and in my humble opinion, sugar cookies without frosting aren’t very exciting.  Hmph.

I tried to come up with plan B, but I was weirdly fixated at this point on making sugar cookies, and then I realized that I could make sugar cookie bars that are filled with scads of sprinkles, and those would do just fine for a birthday surprise.

These Sugar Cookie Bars were incredibly easy to make, and according to my official taste tests, they are sugary, buttery, sprinkly and delicious. I’m thinking that the next time I make these (and there will certainly be a next time), I’m going to add a layer of pink buttercream frosting on top with even more sprinkles, but let’s not get too crazy today. It’s only Thursday after all.

Sugar Cookie Bars

Ingredients

Sugar Cookie Bars

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 3/4 cup sprinkles plus additional to sprinkle on top, if desired

Instructions

  1. Heat the oven to 350 degrees F and prepare a 9x13" pan by spraying with cooking spray.

    In the bowl of an electric mixer, cream together the butter and sugar until it's light and fluffy, for about 2-3 minutes.

    Add the eggs, one at a time, mixing after each egg. Then add the vanilla and mix to combine.

    In a separate bowl, combine the dry ingredients. Slowly add the dry ingredients to the sugar/butter mixture, mixing until just combined. Then, fold in the sprinkles.

    Spread the cookie batter into the pan, patting it down so it's evenly spread. Add more sprinkles on top, if desired.

    Bake for 15-18 minuts, until the edges are lightly golden. The bars will look pale and puffy and under cooked, but be sure to not over-bake them. Let them cool completely before cutting and serving.
