Chocolatey Chunk Mini M&M Cookies

Last week was my very last week as an intern (hopefully ever). I have been interning at an elementary school for the past year, working with small reading groups. I wanted to say thank you to the teachers who welcomed me into their classrooms this year, and what better way to say thank you than by baking homemade cookies? In my book, the best gifts are sweet gifts. So I set out to make a big batch of cookies for the teachers at my school who work so hard every day.

This cookie recipe is one of my favorites–I even have it memorized by now (that’s how easy it is).

First, get out your ingredients.

Ingredients

Combine dry ingredients (flour, baking soda and salt) in a medium-sized bowl.

Soften your butter. You can either leave the butter out of the fridge for a couple hours, or, as I like to do, microwave your butter sticks for about 20 seconds. Make sure you use a microwave-safe bowl!

Now, combine your sugars, white and brown. I combined these in the bowl of my KitchenAid Stand Mixer.

Add the softened butter and vanilla extract.

Mix on medium speed for a few seconds, and then carefully crack in your eggs, one at a time.

Turn the mixer on slow, and carefully add in your dry ingredients. Mix all together until just combined.

Now for the best part–add in the chocolate! Recently, I’ve been using chocolate chunks rather than chocolate chips, but it’s up to you! Any kind of chocolate is good chocolate in my book.

After the chunks are mixed in, spray a non-stick pan with cooking spray, and spoon your dough onto the pan into hefty table-spoon sized balls. I like to add M&Ms after the dough is on the pan, but you could always mix those in earlier along with the chocolate chunks.

Bake at 325 F for 10-12 minutes.

Voila! Chocolately Chunk M&M cookies. I hope the teachers liked them!

Recipe

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) Nestle Toll House Chocolate Chunks
  • 1 cup mini M&Ms

Directions

Preheat over to 325 F.

Combine flour, baking soda and salt in medium bowl. Combine sugars, butter, and vanilla in another medium sized bowl. Mix with electric mixer until just combined. Add in eggs, one at a time and continue to mix on medium speed. Slowly add dry ingredients to mixing bowl, and mix until just combined. Add in chocolate chunks.

Spoon dough onto greased cookie sheets using table spoon. Top with mini M&Ms. Bake for 10-12 minutes or until golden brown.
