Mounds Bar Brownies

As a child, Mounds Bars were always the fun-sized chocolate bar that seemed to sort of slip through the cracks. They were just kind of there. Not overly loud and crumbly and obnoxious like the Butterfinger. Not a tried-and-true classic, like the Hershey Bar, that basically has its own season, thanks to the s’mores. The Reese’s Peanut Butter Cup was the show off. I mean, it’s obviously the best one, I’m not denying, but the amount of attention it gets sometimes is kind of absurd. But the Mounds Bars seemed to always just hang out, off to the side, under the radar. Never the last Halloween candy to be chosen, but certainly not the first. Of course, you’d take Mounds Bars over Almond Joys any day, because, as a kid, nuts were kinda gross and definitely didn’t belong in your dessert.

Fast forward a few years, to when your taste buds are evolving and reaching their full maturity and you start to realize how amazing coconut is. But what’s more, the combination of coconut and chocolate has become one of your favorites. German Chocolate Cake. SAMOAS. Coconut haystacks. Almond Joys. Mounds Bars. Chocolate Coconut Cupcakes. The list goes on and on. When I was in Bali at a cooking class this summer, I learned how to extract coconut milk, coconut oil, and lastly, dried coconut flakes from a single coconut, with the whole process taking several long hours. The hairy ole’ fruit impressed me more than ever after leaving that island, and I knew that I had to use it in a chocolaty dessert very, very soon. Brownies time, me thinks.

Shortly after I got back to Denver after my Bali trip, my friends moved into a cool new house and that’s pretty exciting so I baked them brownies. Guess what? They have coconut on them. Shocker. I tried to recreate the Mounds Bar effect buy mixing coconut flakes with sweetened condensed milk to get that ooey gooey center. So that part sits on top of a fudgy dark chocolate chip brownie. Oh, and then the whole thing is topped with more chocolate. I’m just gonna leave this one here…

Mounds Bars Brownies

Servings 12 brownies

Ingredients

For the Brownies

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup dark chocolate cocoa powder (or regular unsweetened cocoa powder will work)
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 cup dark chocolate or semi-sweet chocolate chips

For the Coconut Topping

  • 2 1/2 cups sweetened shredded coconut flakes
  • 1 12 oz can of sweetened condensed milk
  • 1 1/2 cups dark or semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8" x 8" baking pan with parchment paper, or line with foil and spray with cooking spray. Set aside.

    Melt the butter in a microwave safe dish. Add the sugar, eggs and vanilla extract, mixing until smooth. Then, add in the flour, cocoa powder, salt and baking powder to the bowl, stirring until well-combined. Fold in the chocolate chips.

    Spread the batter evenly in the baking pan. Bake for about 23 minutes; the brownies will be slightly under done but they will be going back in the oven for a few more minutes.

    As the brownies are baking, combine the coconut flakes and sweetened condensed milk in a bowl. When the brownies are done and removed from the oven, top them with the coconut mixture, spreading with a rubber spatula. Sprinkle the coconut mixture with chocolate chips. Return the pan to the oven for 5 minutes. 

    Remove the pan from the oven once more, and use a rubber spatula to spread the chocolate around the top of the brownies. Allow the brownies to cool for at least 2 hours at room temperature, or put the pan in the fridge for about 30 minutes until the chocolate hardens. Cut, serve and enjoy!
