Sugared Blueberry Scones

I was so happy to be home this weekend to spend the weekend with my family for my graduation. The next day, for Mother’s Day, we asked my mom if she wanted it go out for brunch, and she replied that she’d rather just “chill” (and obviously go for sushi later in the day!) I figured that if we weren’t going out for breakfast, then we better have something tasty at home to eat.

I remember when I was little, and my mom would sometimes surprise me with cinnamon scones from Starbucks. They were always our favorite! So today I decided to surprise her with some scones. But in the spirit of summer (ok, it’s not quite summer yet but it was 75 degrees out so same thing), I decided to scratch the cinnamon and use fresh blueberries. These are so easy to make, and you could substitute anything you want for the blueberries! If you try to wake up early to surprise your mom with these, make sure you have all of your ingredients the night before. Otherwise, after a trip to Stop & Shop to buy almost every ingredient needed for this recipe, your mom will already be downstairs having her second cup of coffee by the time you start baking. Oh well, it’s the thought of the surprise that counts!

 Here’s the ingredient lineup.

Mix the dry ingredients together in a bowl and then cut in the butter. This means cutting the butter into small pieces, and mixing it in to the flour bowl until it looks pretty much the same, but with little butter crumbles.

Whisk together the eggs and milk.photo 2

Now pour the wet mixture into the dry mixture.photo 3

Combine until a thick dough forms (I used my hands!), and add in the fresh blueberries.photo 4

Form the dough into two 8 inch circles (just estimate), and cut each circle into 8 wedges.photo 5

Brush with the remaining milk, and sprinkle sugar on top. Bake at 375 F for 15-20 minutes (or until golden brown!). Open your oven and inhale the wonderful scent of sugary-sweet blueberry scones. For the ultimate treat, enjoy these fresh out of the oven (or pop them in your microwave for a few seconds if you somehow resist eating them right from the oven!)

Ingredients

  • 1 cup all-purpose flour
  • 3 tablespoons sugar (plus a little extra for sprinkling)
  • 2 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup, plus 1 tablespoon cold butter
  • 1 egg
  • 3/8 cup, plus 1 tablespoon milk (divided)
  • 3/4 cups of fresh blueberries

Directions

Combine flour, sugar, baking powder and salt in a medium bowl. Cut in the butter until the mixture appears to have small crumbles. In a separate bowl, whisk together the egg and 3/8 cup of milk. Add the wet mixture to the dry ingredients and mix until a moist, thick dough forms.  Add in the blueberries and mix (use your hands to knead dough if necessary). Put the dough onto a floured surface and form into a circle (about 8 inches in diameter). Cut the circle into 8 wedges and transfer onto greased baking sheet. Brush with the remaining tablespoon of milk, and sprinkle sugar on top. Bake for 15-20 minutes at 365 F. Scones should be golden brown. Yield: 8 scones.
