Chocolate-Peanut Butter Banana Bread

I used to be one of those people who throws away bananas at the first sign of over-ripeness. Brown spots? Mushy texture? See ya later! That is….until I learned that the secret to making the best banana bread is to use totally and completely over-ripe bananas. I’m talking completely covered in specks of brown, soft to the touch, and flat out gross-looking. So when I found out that secret, it totally changed my banana bread game. I became a banana hoarder, collecting my house-mates old brown bananas that they were going to throw out. And the beauty of saving old bananas for banana bread? They freeze really well. I practically have a whole shelf in my freezer devoted for banana-bread ready bananas. Last night, I decided to clear up that shelf a little. So, I present to you, my all-time favorite Chocolate-Peanut Butter Banana Bread. It’s extra moist, extra gooey, and extra chocolate-peanut buttery. All good things in my book.

Start by gathering all of your ingredients.

Next, cream together the sugar and butter. I like to use my KitchenAid mixer, but you could do this with a  hand mixer or a wooden spoon.

Now, add in your mashed bananas. If your bananas are frozen, like mine were, stick them in the microwave on “quick-defrost” for a minute or two.

Carefully crack in your eggs and add the vanilla.

Next, combine your dry ingredients (flour, baking powder, baking soda and salt) and pour them into the mixer bowl.

Mix for one minute on medium speed.

Add your chocolate chips and peanut butter chips. My favorite peanut butter chips to use by far are by Reeses. Does anyone do peanut butter better than Reeses?

Mix all together, and pour the batter into a greased loaf pan. Make sure you grease it well. Otherwise, you’re going to have a banana bread mess on your hands!IMG_7514

Bake for 60 minutes at 325 F, take it out of the oven, and let your house be enveloped by the wonderful smell of chocolate peanut butter banana bread.

Also, don’t forget to share. I guarantee that you will want this whole loaf to yourself, but that’s probably not a good idea. Enjoy!

Recipe

Ingredients

  • 1 cup granulated sugar
  • 4 ounces butter, softened
  • 1 1/2 cups mashed bananas
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup semisweet chocolate chips
  • 3/4 cup Reeses peanut butter chips

Directions

Preheat oven to 325 F. Cream together the sugar and butter using an electric mixer or wooden spoon. Add in the mashed bananas; mix well. Crack in eggs and add vanilla, and combine until smooth. Combine dry ingredients in separate medium bowl (or same bowl). Mix until just combined. Fold in chocolate and peanut butter chips. Spoon batter into greased load pan. Bake for approximately 60 minutes, or until a toothpick comes out clean.
