Kit Kat Cookie Bars

Servings 12 bars

Ingredients

  • 1 cup (two sticks) unsalted butter, softened
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 30 Kit Kat bars

Instructions

  1. Preheat the oven to 350° F. Line an 8" x 8" pan with aluminum foil and spray with cooking spray. Set aside.

  2. Cream together the butter, sugar, and brown sugar in the bowl of an electric mixer, until smooth and creamy. Add the egg and vanilla and mix until smooth. In a small bowl, mix together the flour, baking soda, and salt, and stir until just combined. Slowly add the dry ingredients into the wet ingredients, mixing on low to medium, until well combined. Fold in the chocolate chips.
  3. Press about half of the cookie dough into the bottom of the pan. Then, layer 15 Kit Kats on top of the cookie dough, reserving the remaining 15 Kit Kats for after baking. Top with the remaining cookie dough, pressing around the edges of the Kit Kats so the entire top is covered in dough.
  4. Bake for 22-25 minutes, or until the edges of the bars are golden brown. Wait about 5 minutes, and then quickly top the bars with the remaining 15 Kit Kats (working quickly will prevent them from melting too much). Press the Kit Kats onto the tops of the bars so they begin to stick and melt, and then transfer the pan to the fridge to cool for about 30 minutes before serving. Enjoy!

  5. Bake for about 10-12 minutes (larger cookies will take longer) until the edges of the cookies look golden brown. Sprinkle the top of the bars with the remaining white chocolate chips and rainbow sprinkles. Let the cookies cool for about 15-20 minutes before serving. Enjoy!
