Preheat the oven to 375° F. Grease a baking pan with cooking spray or line with a silicon mat.

In a medium bowl, beat the butter and both sugars with an electric mixer on medium speed until light and fluffy, for about one minute.

Next, add the egg yolk and vanilla and beat until just combined.

Whisk together the flour, salt, baking soda and baking powder in a separate bowl.

Combine the flour mixture with the butter mixture, and beat just until combined.

Stir in the chocolate chips and crushed potato chips until combined.

Scoop the dough into two giant balls (or four smaller balls), and space them spread apart on the baking sheet.

Bake for 10-12 minutes (less time for smaller cookies), removing the cookies from the oven when the edges just start to turn golden brown. Sprinkle the tops of the cookies with additional chocolate chips and potato chips, if desired.

Let the cookies rest on the baking sheet for a few minutes before moving them to a wire rack to cool.
